Tomorrow begins the 22-day Holistic Gut Reset!

Participants in the group get to create their own Reset plan as they give themselves permission to feel better.

They get to take a break from either gluten, dairy, sugar or all of them at once.

Some may also choose to just eat whole foods during the Reset.

Either way, we are all giving our gut a break from possibly very inflammatory foods.

While I was in Europe the last two weeks, I was exposed to lots of delicious baked goods. My British friend, Annabel, had a cute apple tree full of delectable apples (we didn’t know its variety. She simply called it “eating apples” versus “cooking apples”).  She had made muffins with them just before my visit with her.

Annabel and I are alike in that we have a very hard time following any recipes.

So when I asked her if she could share her muffin recipe, she gave me that look and reluctantly said…probably!

We were busy doing so many things that I forgot to ask her for the recipe again.

Upon my return home, I found some McIntosh apples in the fridge, and leftover carrots. So I decided to make up my own version of Annabel’s apple muffins that would suit the upcoming Reset. For me, I am taking a break from gluten, dairy and sugar.

I managed to write down what I did and it turned out to be good!

So here goes – a gluten, dairy and sugar free muffin recipe for you all to enjoy!

Apple Carrot muffins 

Gluten, dairy, sugar free

Ingredients:

  • 2 eggs
  • 1 cup carrots, grated
  • 1 cup apples, chopped 
  • 1 cup gluten free rolled oats
  • 1 cup almond flour
  • ½ cup nut butter
  • ⅓ cup ground flax
  • ½ cup plant milk 
  • 3 tablespoons honey
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions:

  • Preheat oven to 375F
  • Combine all ingredients well. I used a standing mixer.
  • Scoop batter into muffin tins.
  • Bake for 20 mins
  • Makes about 9 plump muffins! Let cool a bit before taking them out of the muffin molds.
  • Enjoy with a dollop of coconut yogurt, and a cup of tea or coffee!
