Carrot Zucchini Breakfast Cookies

These are quick to make, fun to eat, and so perfect with your morning cup of tea or coffee!

I often eat them for breakfast as a quick go to after my workout and before I start the day. There’s just enough sweetness to satisfy my sweet tooth, but not over powering.

Enjoy every sweet bite!

INGREDIENTS

1 cup combined grated carrots / zucchini (or just one of them)

1 cup rolled oats

1 egg

1/4 cup honey

1/2 cup nut butter

1/4 cup raisins or dried cranberries

1 teaspoon pumpkin spice

1 teaspoon baking powder

pinch of salt

INSTRUCTIONS

Preheat oven at 375F

Combine all ingredients well

Use cookie scooper or two spoons to form dough into cookies

Place on baking sheet

Bake for 11-12 minutes
