I love the word pudding. Don’t you?
Just saying it makes me happy. It sounds like what it is… something that is simple, and yet, joy-filled.
I don’t actually eat a lot of pudding. I would choose a piece of baked good instead, or a piece of cake. But THIS pudding is different. It’s just that good.
With a few ingredients that you may already have in your pantry, this recipe comes together in minutes. It serves a nice portion for 3-4 people. Add berries, a little cinnamon or just eat it alone. You won’t regret it!
CHOCOLATE AVOCADO PUDDING
- 1 cup ripe avocado
- ½ cup of cocoa powder
- ½ cup plant-based milk
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- Dash of salt
- Combine all ingredients in a food processor
- Blend until smooth
- Serve chilled with berries
