Roasted Feta Pasta with Roasted Tomatoes Garlic

Who knew I could get trendy?

I am not a naturally trendy type.

But if it’s about food, I can usually get on board!

My daughter mentioned something about this feta pasta recipe a few days before I came across it. Sure enough, it’s been everywhere since 2019! 

It sounded simple enough, and I happened to have all the ingredients (especially because there aren’t too many). As usual, I added my own flavor to it (because I can not follow a recipe 100% – it’s a pathology!), so I threw in some garlic (a lot) to roast with the rest. The party is always more fun with garlic. No?

So, how was it?

Fabulous. Delicious. Easy. Addictive.

No wonder it broke the internet – from TikTok to instagram, from Finland to America.

Roasted Feta Tomato Pasta with Roasted Garlic

Ingredients:
  • 8 ounces dried pasta like penne or fusili
  • 2 pints cherry tomatoes
  • 8 ounce block feta cheese
  • 6-10 garlic cloves (to your liking)
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoons red pepper flakes (optional)
  • ¼ cup chopped fresh basil or parsley or both
Instructions:
  • Preheat oven at 375ºF
  • Place all ingredients (except the pasta and fresh herbs) in a baking dish
  • Roast for 40 mins
  • 10 mins before the feta roast is done, cook the pasta as instructed to al dente
  • Remove feta from oven, with a fork, mash everything together to create the “sauce”
  • Combine sauce with cooked pasta
  • Salt and pepper as desired
  • Top with fresh herbs and enjoy!
