Molasses cake

A recipe for molasses cake.

The blackstrap molasses jar sits on our kitchen counter.

“What are you going to do with THAT?” inquired my daughter.

“Make a cake”, I said.

“Really, now?” my daughter asked.

“Yup, now,” I replied.

My daughter asked, “Why?” 

“Just because,” I stated.

“Okay, yum. I can’t wait.” my daughter said, thrilled.

Sometimes, life can be that simple. Bake a cake, just because. 

I think you should, too. Especially THIS recipe for molasses cake. It’s moist, flavourful and really hits the spot. That’s all I will say. It’s as simple as that!

MOLASSES CAKE

Ingredients:

  • ⅔ cup molasses
  • ⅓ cup brown sugar
  • 2 eggs
  • ½ cup butter, softened
  • ½ teaspoon baking soda
  • 1 ½ cup unbleached flour
  • Dash of salt 
  • 1 tablespoon ground ginger
  • 1 tablespoon ground pumpkin spice

Instructions:

  • Preheat oven at 350ºF
  • Mix all ingredients together in a bowl, or a stand mixer
  • Pour batter into a greased baking dish
  • Bake for 30 minutes

Once the cake has been removed from the oven. Let it sit for 20 minutes (or more) until completely cool. Try dusting it with powdered sugar for a beautiful and simple look! Enjoy!
